I wanted to create a large omnivorous creature - something intimidating in appearance like a Shoebill but ask in this instance, is it a threat or not? I am building a rig now with some plans to create a small cinematic in UE.

Hi Res sculpt in Zbrush. For organic models, I prefer to extract displacement maps, normal maps and cavity maps directly from Zbrush as opposed to baking details in. I find that this gives me more detail to work with.
